Moroccan Tomato Sauce with Chicken
I recently stumbled across a recipe for Moroccan Eggs on Home Shalom, and it looked so different that I had to try it. I was actually shocked at how much we all really liked it. I’ve made it several times since, and then I began to think how good the sauce would be on other things, especially chicken. I tried it, with a few variations, and it is so good. I can’t imagine much of anything I wouldn’t like in this sauce – fish, shrimp, garbanzo beans, cauliflower,… the possibilities are endless!
Moroccan Tomato Sauce with Chicken
olive oil
1 whole head of garlic
700 grams (about 1 quart) of pureed tomatoes
up to 1 cup of fresh or frozen spinach or other greens
1 pound or 1/2 kilo of chicken breast, cut into chunks
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp coriander powder
1/2 tsp turmeric
1/4 tsp cinnamon
1/4 tsp pepper
3/4 tsp salt
2 tsp of dried parsley
Optional: 1/2 tsp cayenne pepper (more or less to taste – for the kids, I omit)
Optional: top with fresh chopped cilantro at the end
1. Peel your garlic and saute it just a bit in the olive oil to give it a roasted flavor. Pull out the garlic cloves and put them in the blender with the tomatoes and the spinach. Set this sauce aside to prepare the chicken.
2. Put the chicken in the remaining garlic-flavored oil and begin to cook it. While it cooks, you can either add all the spices to the chicken or to the sauce. I can’t decide which way I like it better or even if it makes a difference. Please let me know what you think! Of course, if you’re using the sauce for something other than chicken, you’ll want to add the spices to the sauce.
3. When the chicken is cooked, add the tomato sauce mixture and stir. Simmer to let all the flavors meld.
Garnish with salt and pepper to taste and cilantro as desired. We really like it served over couscous, millet, or brown rice with a green veggie on the side (or all around!) Enjoy!
