I have long been on a quest for the perfect pancake recipe. I’m not sure I’ve found it yet, but this one is really working for us right now. Littlenificent’s first words to me most mornings right now include the two words “hungry” and “pancakes” almost every day. This recipe feeds our family with a few leftovers to warm up the next day or to have for snacks, so I’d say it feeds 5 or 6.
Our Favorite Banana Pancakes
- 1 2/3 cup whole-wheat flour (this works beautifully with a gluten-free mix like this one)
- 2 1/2 tsp baking powder
- 6 little bananas (that’s about 2 American-sized bananas)
- 3 eggs
- 1 1/4 to 1 1/2 cup milk – (nondairy works fine)
- 1/2 tsp salt
- 1 or 2 tsp cinnamon
- 2-4 Tbsp coconut oil or other vegetable oil
Put it all in the blender and blend. Add milk till it’s pourable. Pour it onto the skillet in pancake-form. Enjoy!!
